Success! Apple Fritters!

So last night I tried to make some cheesy, bacon biscuits. They stunk! Sometimes GF cooking is def hit/miss. That one was a MISS, and wow what a miss.

But it's raining hurricane conditions here today so what to do.....attempt GF apple fritters. Now Dave was into yet another experiment cause he's into apples, so much so that he ran to the store for all the ingredients I lacked. Cause he's cool like that.

And I made them..... Oh GAWD did I make them.....

So anyone with a GF peep in their life, comment and I'll send the recipe over.

Thanksgiving Blessing

I'm so lucky to have good friends. While several people have jumped in to help with Thanksgiving cooking, my bestest friend since birth (hi mom) was with me today to precook and prep most of the food. I have two broilers (1 for turkey and 1 for ham) so my oven is free for whenever the girls show up to help cook (no lifting for me). I'm planning on sitting down alot, energy levels are still low. However, huge note today my blood pressure was actually kinda normal.........yeah! I'm keeping an eye on it for now though.

However, in between naps I did turn out the best new recipe I've had in a long time. The kids slurped it up, I was in shock.....

Slice up two zucchini
Slice up two ripe tomatoes
Slice up a slice of onion, pop layers apart

Layer the veggies, sprinkle top with garlic salt and pepper, then drizzle with olive oil.

Repeat veggies, repeat seasonings.

Sprinkle thyme along the top, sprinkle some mozz cheese and toss in a 400 degree oven for 20 minutes.

Yum.........

Inventing Sunday's....

Taste testing recipe tonight:

Mustard-Basil Chicken

and the verdict, OMGawd......I should have made more.

so if you're needing a recipe:

3 tsp dijon mustard
4 tsp olive oil
1 tsp honey
1/2 tsp basil
salt
pepper

mix it up and smear your chicken before you grill.

Easy cheesy chicken pleasey.

From Heaven to You

It's not P-Dub so don't expect too much in the way of cooking photos, but for those of you interested, I've documented my super duper granola recipe today.

Since going Gluten-Free, I've had a hard time finding snacks so in desparation for sweet morning foods, I scoured the internet for the perfect recipe. And after the first batch, I revamped it and made my own.

Which rocks, if The Man and the girls are asked.

Start with the ingredients.
Gluten-Free oats (sold with it marked on top, usually at a organic store but my local grocery actually carries a teeny tiny GF section), banana chips (optional), carmel bits (optional), nuts, honey, peanut butter, vanilla, brown sugar, chocolate chips (high quality chocolate is GF)) and cooking spray. (I really like Great Value - Walmart brands as they list ALL their products either Gluten-Free or Wheat included). Globe is optional, I personally think it adds texture.

So first you take 2 cups of oats and 1 cup of nuts and toast them in an oven at 400 degrees. Till toasty, once the oven is preheated it is less than 10 minutes, watch them closely as The Man has had to dispose of two separate trays of burnt oats........ :) I'm not a perfect cook.

This is nice and toasty looking oats. Perfecto!
Sit them aside and reseat your oven to 350 degrees. While that is resetting, in a very old saucepan, mix half a cup of honey with 1/4 cup of brown sugar.......to make the goop. The mix that will hold it all together.
While that is mixing, keep stiring it and then spray your equally old stained but clean pan with cooking spray.
You should have a roaring bowl that looks all foamy when your goop is ready. At this point add 1/3 teaspoon (or just a generous tip of the bottle) into the pan and remove from heat. Give it a quick stir and take off stove.
Our it into a bowl and then mix in half a cup of peanut butter, briskly stir and when the goop becomes very thick........


Toss in the oats and nuts.......mix well as it's best mixed when hot. Coat all the oats/nuts well.
Chop your banana chips into small pieces.......
Add marshmellows if you're my children, and carmel bits.......oh yum, very healthy
When coat with the hot oat mixture........cover well
Once completely covered..........

Mush into place...........
Sprinkle with chocolate chips and then throw it in the oven..........
Have a snack while you're waiting..............
Check the mixture.........it should be slightly golden brown and chocolate melted.........about 5 minutes
Then take it out and let slightly cool before you cut into bars. Then toss it into a ziplock bag and keep in the fridge. No preservatives means it will go badly very quickly.
Enjoy! We make this is vast quantities and often the past month.

Something smells good...

It's hard living up to the whole "mom" thing sometimes, especially when you're a working mom but occassionally at our house we do break out the fun stuff. There is nothing my girls like more than cooking, in fact they are going to both take classes in it very soon, I hope to never cook again. Moving on...... we decided to make banana cake......from scratch, heaven help us.
We began by having Duchess mash the bananas. This was after I ran around to every room demanding to know who had eaten three bananas in the 15 hours since I had purchased them. Eat chocolate or candy, people, not my recipe ingredients......
Then we mixed it all up good and plopped it in a pan. These pans are amazing, I have no clue where you get them or what they are called but they are angels sent straight from God in Heaven. They come immaculately (no pun intended) clean every time you use them....I love you white pan.....

We are nut lovers, and yep that reads as bad as it sounded in my head, so we added walnuts to our cake. Yum.......

Then my mom snapped and held me hostage till I started confessing to all the times I snuck out of the house during my teen years.........only once mom, only that one time and you met me at the door and let me sneak back in cause your the pooh mom, I swear....... and I would really like that golf/spa package for Christmas, let's take a lunch and talk about it some more......


Fresh out of the oven, this golden brown cake became the most germ ridden object in my house....cause we're freaks and we all walk up, smell it, then put on hand on top and announce, yep too hot to frost...... multiple times.......

However, after we finished dinner, we slapped homemade frosting on this bad boy and then we ate it fast.....oh man, it was amazing.
So here you go.....just in case your tempted!
1/2 cup of butter
1 and 1/2 cups of sugar
2 eggs
2-3 nice ripe bananas, mashed well (I always use about 3 medium)
1/2 cup of buttermilk
1/2 teaspoon of baking powder
3/4 of a teaspoon of baking soda
1 teaspoon of salt
2 1/4 cups of unbleached flour (freshly milled pastry flour is best)
1/2 cup of chopped nuts (if you like nuts--you can use your favorite kind)
Peel, and mash your ripe bananas.
In a large bowl combine:Butter and sugar, and beat. Add eggs, bananas, and buttermilk. Beat well with a spoon, or with a mixer for about 2 minutes. Add baking powder, baking soda, salt, and flour. Beat until well combined, by hand, or with a mixer for about 2 minutes. Fold in nuts, if you're using them.
Butter and flour 2 round cake pans (or whatever shape pans you prefer). Pour batter into your pans and bake at 350 degrees for about 25-30 minutes. Do not over bake.
After the cake has sufficiently cooled, frost with cream cheese frosting and garnish with fruit of your choice or if your like me, you live in a house where fruit can't remain in the fruit dish for no longer than 24 hours.
Oh and keep telling yourself that it's fat free........it is, really.........I swear......

Countdown Begins...

The countdown to the 4th of July has begun. I love the 4th! It's not just that I get a paid day off work, although that helps! It's not just because of the idea of freedom for our country! No, it's mainly because I love food.

There are so many ways to cook All-American food that I lose count. But my favorite is the hot dog. I don't want to know what's in it....I just love it.

I'm not a hot dog snob. I don't care if it's beef, chicken or turkey. I don't care if it's Chicago style (yeah baby!), Chilli-ed up, or even plain.
However, the 4th is the time of year to publically declare my love for the SAUCE DOG.
A small diner in my hometown served SAUCE DOGs when I was growing up.

The secret to the bbq-ey tasting sauce was so heavily guarded that the owner supposedly made it at home, brought it in and when that batch was gone, that was it people. I ate there often, smacking my way through sauce dogs left and right. Never thinking that there could be a world without sauce dogs. Until I left home. I even told The Man about them and on the first "Family Visit" trip back home, he got to taste the bliss that was a sauce dog. And didn't even question why I ordered six to go and then put them in my purse.

But after that fateful visit, the diner closed and withit, the recipe for SAUCE DOGs....closed with it. Sniff, sniff, the though makes me tear up still today.

Now, does the memory of the sauce dog taste better than the actual sauce itself? Has the sauce dog become the "one that got away"?

Stay tuned, I think I've found a recipe people and I'm gonna try it out....on the 4th....With my new hotdog grillers*....
*You know I would never buy anything so tasteless, so I'm gonna have my friend purchase them for me. The look upon The Man's face will be compensation enough....

Dare You To Make This!


I don't do alot of cooking now that the step-dad from heaven has arrived with all his chef-ly skills...

However, I did make them beautiful bad boys for a recent gathering of friends. I'm rather proud of it. In fact, I've ordered a blown up picture to hang above my bed.

So here you go: Fruit From Heaven Recipe

You'll need:

-bananas (at least three)
-apples (six Gala apples are my preference)
-kiwi (for garnish so just two)
-strawberries (small carton)
-one package crystal light orange flavoring
-water (duh)
-skewers (cut to size) or large party toothpicks

The secret to the whole concoction is the juice. Start by mixing one package of crystal light orange flavoring into the called for amount of water. Stir, put in fridge while you chop.

Then chop all your fruit into beautiful sized wedges. Be sure to trim down your skewers if you use those.

Then dip apples and bananas into the orange mix. This sweetens the fruit up as well as preserves it, something about the acid in the mix. However, when I make this I soak them for about 10 minutes in the mix before skewering. My fruit never loses it's crispy taste or beautiful color. No brown bananas!
Then get creative and skewer your fruit. When complete, aluminum foil the whole plate up and chill till serving time.
I never have left overs!
